Names and addresses are encrypted at rest; emails are stored in plaintext so they can be searched and matched by the GDPR handlers. Your access tokens are deleted immediately. Your store's data is retained for 48 hours so an accidental uninstall can be reversed by reinstalling, and is permanently deleted in response to Shopify's shop-redaction request — always within 30 days of uninstall.
